Chef Ellen’s 5 New Recipes

We are SO lucky that we are featuring five new, healthy recipes from Chef Ellen Postolowski on FaveDiets.com. Chef Ellen is a personal chef who just released her new book, “It’s Just Personal.” In her book, Ellen gives her philosophy on the essentials of eating right, some guidelines to organizing a healthier kitchen, and much more. We love this idea and can’t wait to read the book. A few of you lucky readers may even get the chance to win a free copy, but more on that later.

Chef Ellen has shared some of her recipes with us, and we would like to tell you all about them. These are healthy, inventive recipes that you will love cooking and eating.

  1. Low-Cal Double Chocolate Chip Muffins: You can enjoy this chocolatey treat for breakfast or as a snack. Each muffin is under 200 calories  and is full of flaxseed, which has countless nutritional benefits. You might even be able to trick the kids with this one!
  2. Cinnamon Sugar Bagel Chips: I love using leftover food when I cook, especially if I’m creating something entirely new and amazing. These bagel chips are like something you would buy in a grocery store, but they are fresh and homemade. If you must dip them, I would try some fat-free honey-walnut cream cheese.
  3. Costa Rican Rice and Beans with Poached Eggs: Enjoy this dish and meal of the day! It is a traditional Costa Rican breakfast dish, but it can also be a protein-packed dinner full of flavor. It even looks amazing!costa rican rice and beans 3 300x180 Chef Ellens 5 New Recipes
  4. Fiber-Full Black Bean Soup: This simple soup is easily made with a combination of canned and fresh ingredients. You can make a whole Southwest meal out of this soup with whole-wheat croutons and sliced avocado on top. I’d like to top it with some hot sauce for an extra kick.
  5. Roasted Summer Ratatouille: Fresh summer vegetables are perfect for this ratatouille. It makes a colorful vegetarian main course to top brown rice or a tasty side dish for any meat or tofu. This dish is great for any season with winter squash too!
