Colts or Saints? Let Food Decide

Just in case you haven’t heard by now, the Indianapolis Colts play the New Orleans Saints in the Super Bowl on Sunday. This Super Bowl, give your game day eats a unique healthy twist by catering your eating around the two participating teams. For the Saints, Louisiana Cajun cooking, like this recipe for Cajun Shrimp Gumbo, is the way to go. For the Colts fans, celebrate the Midwestern bounty of Indiana with some delicious corn recipes, like this recipe for Oven Corn Casserole.

Cajun Shrimp Gumbo

Cooking Time: 1 hr 30 min

Ingredients

  • 1 pound fresh shrimp. peeled and de-veined
  • 1 quart water
  • 2 quarts chicken stock
  • 1 1/2 pounds fresh sliced okra (frozen will suffice)
  • 1/2 cup oil
  • 1/2 cup flour
  • 1 large green bell pepper chopped
  • 1 medium onion, chopped
  • 1 cup chopped celery
  • 2 cloves garlic minced
  • 16 ounces can whole tomatoes
  • 1 bay leaf
  • 1 teaspoon thyme
  • 1 teaspoon basil
  • 1 teaspoon cayenne pepper
  • 1 black pepper
  • 2 teaspoons salt
  • 1 teaspoon file powder

Instructions

1. Saute okra in a skillet with about 2 tbsp. of oil until tender. Set aside.

2. In a large Dutch oven, combine 1/2 cup oil and 1/2 cup flour and stir together over medium heat until mixture becomes a dark roux.

3. Add onions, celery, bell pepper, minced garlic and saute’ until vegetables are tender, stirring constantly.

4. Mix in sauteed okra, tomatoes which have been hand crushed with juice, chicken stock, water, bay leaf, thyme, basil, peppers, salt, and bring to a boil.

5. Reduce heat and simmer with the pot loosely covered for about 90 minutes, stirring on occasion. Mixture will thicken.

6. Add shrimp and cook only long enough for the shrimp to turn pink and opaque ( a matter of minutes). Remove from heat and stir in file’ powder. Do not reboil.

7. Ladle over steaming hot white rice.

Oven Corn Casserole

Cooking Time: 1 hr

Ingredients

  • 1 can cream style corn
  • 1 can whole grain corn, drained
  • 1 medium onion, chopped
  • 1/2 medium Bell pepper, chopped
  • 2 ounces jar pimento, drained and chopped
  • 2/3 cup milk
  • 1 egg, beaten
  • 1 cup crushed saltine crackers
  • 1 cup cheddar cheese, grated
  • 1/4 cup butter or margarine, melted
  • 2 tablespoons sugar
  • Salt and pepper, to taste

Instructions

1. Combine all ingredients. Place in a buttered 2 quart casserole dish. Bake in a preheated 350 degree F oven for 1 hour.
