Delicious Vegetarian Lunches and Tips

I don’t exactly consider myself a vegetarian, but I do love vegetarian dishes. I don’t eat red meat, so I consume a fair amount of tofu, veggies and other fake meat products. I am obsessed with tofu pad thai, veggie burgers with grilled onions and avocado, and hearty black bean soup.
Since I stay away from most lunch meats, it’s often hard to find something to eat for lunch. At least I can pack a tuna sandwich, but what can vegetarians eat for lunch? It’s hard to think of creative lunch recipes so you don’t get sick of peanut butter and jelly or canned vegetable soup. We have put together a list of our 8 favorite vegetarian-friendly recipes plus tips and reasons why you should consider vegetarian foods.
Even if you aren’t a vegetarian, you should consider following a vegetarian lifestyle. Why? Well…

Have you tried cabbage or collard wraps with sprouts avocado mushroom etc… Tortilla wraps with black bean burgers loaded with veggies. Brown rice stir fry with tofu broccoli mushrooms celery onion bell pepper with crush pepper flake. Differnent types of salad w/ or w/out spinach or any greens almost like a vegetarian anti pasto. Pasta salads are good lunch items carry your dressing in a smaller container that way your pasta is still fresh. These are a few tweak them with veggies you like. Play with green smoothies add your fave fruit / veggies.
