Easy Healthy Recipes to Start your New Year Right

We all know what happens after New Year’s Eve: We make resolutions to start this year off eating better, exercising, and losing weight. While those are admirable goals, they are really too sweeping and general in nature. A more specific goal might be to simply starting cooking more easy healthy recipes, and that’s something we can all benefit from. Even if you aren’t trying to lose weight, easy healthy recipes are good for all of us, and January is just as good a time as any to start cooking with them.
Just as we try to start our year with easy healthy recipes, we can start our days out that way by eating a healthy breakfast. You’ll hear time and time again that breakfast is the most important meal of the day, and it’s really true. If you are typically a non-eater of breakfast, do yourself a favor and eat a healthy breakfast every day for a week. You’ll find you are more alert, have more energy, and probably eat less junk the rest of the day.
Here are some quick, easy healthy recipes for breakfast to help you get your New Year started right:
Southwest Turkey and Cheese Omelet
Serves: 5
Preparation Time: 10 min
Cooking Time: 5 min
Ingredients
- 2 tablespoon vegetable oil
- 3 green onions, sliced
- 1 1/2 cup chopped cooked turkey
- 1/2 cup cooked fresh or canned corn, drained
- 1 3-ounce can chopped green chiles, drained
- 6 eggs
- 1/3 cup milk
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 cup shredded pepper Jack cheese
Instructions
- Heat oil in a large skillet over medium-high heat. Add green onions and turkey.
- Cook, stirring occasionally, until green onions are slightly soft, about 5 minutes.
- Add corn and chiles to skillet; mix well. Meanwhile, combine eggs, milk, salt, and pepper in a large bowl.
- Mix well with a whisk. Pour into skillet. Turn heat to medium.
- Top with cheese. Cook, covered, until center is set but not dry, about 5 minutes. Slide onto serving plate. VARIATION: For extra color, add 2 tablespoons chopped pimiento
Cooking Time: 20 min
Ingredients
- 15 ounce box raisin bran
- 5 cup flour
- 3 cup sugar
- 5 teaspoon baking soda
- 1 teaspoon salt
- 4 eggs, beaten
- 1 cup oil
- 1 quart buttermilk
Instructions
- Mix dry ingredients well in a very large container.
- Mix wet ingredients together, pour over dry ingredients and mix well. Refrigerate batter at least 6 hours. before baking.
- Fill muffin tins or papers 2/3 full and bake at 400 degrees F for 20 min.Note: Batter will keep in fridge for up to 6 weeks, baking a little at a time. Batter will get very thick and light colored, kind of “airy.”
