Get Back on the Wagon, Now!

I caught a short segment of the “Today Show” yesterday morning. A woman, Ruby, was being interviewed about her weightloss progress because she had gone from being morbidly obese with severe diabetes to being able to exercise and be more active, even drive her car again. She wasn’t one of those amazing cases where the woman goes from one heavy extreme to the opposite skinny extreme; Ruby was still heavy, but had made huge progress for herself.
Her advice to the audience was to start TODAY. She said there were so many times when she said she’d diet tomorrow, she’d cut the calories tomorrow, she’d go to the gym tomorrow. And the truth is, tomorrow is more like 5 or 10 years down the road. Do something about it TODAY. So what if you ate a cupcake at work today or had a bag of chips on the car ride home. Make your next decision a healthy one!
There’s that saying that goes “You won the battle, but lost the war,” which is applicable to most things in life. It certainly doesn’t have to be true of weight loss. Each smaller battle, won or lost, will lead to the eventual winning of the war against fat! So fight your battles individually and intentionally, because everything counts. Don’t beat yourself up for what is already in the past, but get back on the wagon, now!
Here are some recipes to get you back on track for your next meal:
Basil, White Bean and Tomato Soup:
Ingredients
* 2 dried great northern beans (about 1 pound)
* cooking spray
* 1 cup chopped onion
* 6 garlic cloves, chopped
* 1 cup diced peeled baking potato
* 2 chopped fresh or 1/2 teaspoon dried thyme
* 3 (16-ounce) cans vegetarian chicken-flavored broth
* 2 bay leaves
* 2 diced seeded tomato
* 1/4 cup chopped fresh basil
* 1 tablespoon lemon juice
* 3/4 teaspoon salt
* 1/4 to 1/2 teaspoon crushed red pepper
* 1/4 cup grated fresh low-fat parmesan cheese (1 ounce)
Instructions
1. Sort and wash beans; set aside. Then, place a 6-quart pressure cooker coated with cooking spray over medium heat until hot.
2. Add onion; saute 2 minutes. Add garlic; saute 1 minute. Add beans, potato, thyme, broth, and bay leaves.
3. Close lid securely; bring to high pressure over high heat (about 7 minutes). Adjust heat to medium or level needed to maintain high pressure; cook 35 minutes.
4. Remove from heat; place pressure cooker under cold running water. Remove lid and discard bay leaves.
5. Partially mash bean mixture. Stir in tomato and next 4 ingredients (tomato through red pepper).
6. Cook, uncovered, over medium heat 5 minutes or until thoroughly heated, stirring frequently. Sprinkle with low-fat cheese.
