July 4th Fare CAN Be Healthy

When you think of the 4th of July, like most people, you probably think, “Barbecue!” Well, that’s not a bad thing, but so often, the only things people are ‘cueing are the opposite of heart-healthy and good-for-you foods. Well, I found a great recipe for Avocado Soybean Veggie Burgers that we’re going to try for my niece, who happens to be a vegetarian. All of us are going to have them, but that 23-year-old is the inspiration for the rest of us in the family.
Another thing many of us think of at summer holiday time is dessert, which happens to be my favorite “meal!” That’s why, in trying to keep with our healthy-eating-for-the-4th theme, we’re going to make this yummy-sounding Cinnamon Banana Walnut Cake. It’s not a barbecue without dessert, so we figured it could at least be better for us than most.
One of the most fun parts about cooking for holidays is involving my 2 1/2-year old son. He just loves to cook, both in his pretend kitchen and for real with Mommy and Daddy. For a recent family gathering, we made this awesome, Easy-Peasy Fruit Salad, and it was a huge hit! My brother-in-law, who doesn’t even like fruit salad, loved it, and we had none to take home with us! My son and I are making it again for tonight’s festivities, and I’m betting it will be a hit once again.
