Raw Salad Dressing

My fiance and I have been trying the whole organic/raw/super food thing for a little while now. It’s not easy to be strictly raw or strictly organic, because of cost – and well – temptation! However, super food shakes in the morning and salads for lunch help the process!

A couple of dinners a week we’ll make a huge salad, and last night we tried this raw thousand island dressing that we found on Youtube. It was pretty yummy! We tweeked the ingredients a little bit.

In a blender:

  • 4 tomatoes
  • 1 large clove garlic (or 2 small ones)
  • 1/2 cup pine nuts
  • 4 tablespoons apple cider vinegar
  • 3 figs
  • 2 tablespoons hemp seed
  • 1 tablespoon dijon mustard
  • sea salt and pepper, to taste
  • basil, to taste
  • lemon juice, to taste
