Rhubarb Recipes for Dessert

Rhubarb is not a seasonal crop that many people think about using, but should. It is harvested in the spring and when April and May come, we can’t wait to start cooking with it. Rhubarb is especially delicious in desserts!
Rhubarb is not classified as either a fruit or vegetable, but rather a big leafy plant. Try combining it with strawberries for a candy sweet flavor in jams or pies.

Hi Matt, you know, I’ve never cooked with rhubarb, but have eaten it. I also just bought some strawberry & rhubarb jam. I’m going to buy a couple stalks (is ‘stalk’ the right terminology?) though and make something soon. Thanks!

Pam – Capella drops look like an intriguing product. I’ll have to give them a try sometime.
Stella – I’m a huge fan of rhubarb in desserts. The strawberry-rhubarb combo is pretty classic, so you can’t go wrong there. Let us (me and Nicole) know what you end up making and how it turns out.
