For the June version of This Month’s Healthy Bite, we asked – “What is your favorite recipe for the grill?” We got some great answers, from chicken and burger recipes to tasty veggies and even grilled pizza. Check them out:

Oh, to grill I have this great seitan burger recipe that I make. Basically its a great big log of seitan loaded with TVP and veggies to give more texture which is baked, and then sliced into burgers which we grill. Super yum. I also like asparagus on the grill, marinated beforehand in a little balsamic and olive oil.

Sitting in an asadero or barbecue restaurant in Colombia eating a beef, pork or chicken skewer with arepa and papa salada is like heaven to me. Street vendors set up outside the clubs and bars in Medellín, serving all kinds of skewers and grilled corn. The flavor of these chuzos is fantastic. We marinate all of our meats overnight in Colombia. I remember coming home from the supermarket when I was a girl and watching my mom trim and marinate all the meats she just bought and storing them in plastic bags, which she would label with the date and the type of meat. That was an all day affair, but she had the meat ready for the rest of the week and with amazing flavor.

I’d have a hard time narrowing it down one very favorite recipe for the grill, but these Grilled Middle Eastern Turkey Burgers were definitely one of my favorites last summer.

Typically, most people think of meat when they think of grilling and I’m no different. But, my favorite recipe is actually a side dish, which I’ve always called “potato and vegetable parcels” for lack of a more creative name. To make these fun treats, do the following:

Lay out a piece of aluminum foil. On the foil, lay down a thinly-sliced (about 1/4 inch thick or so) Yukon Gold or red potato (I like to leave the skin on) in the center of one dimension, closer to the edge in the other dimension. Then, lay down a slice of vidalia or red onion, overlapping the potato, another slice of potato, a bell pepper ring (any color you prefer), another potato slice, and so on until you have about 8-10 layers or so. Lightly drizzle on some olive oil, sprinkle with some kosher or sea salt, and some freshly-cracked black pepper. Gently wrap the parcel (but make sure it is closed tight) and repeat for each person. Place the parcels on a cooler section of the grill so that they can slowly cook while you are grilling other items. The amount of time will depend on the size of your vegetables as well as the heat on your grill, so check often until it reaches your desired doneness. Serve with wedges of lemon, if desired.

As you can see, this recipe is flexible. Other vegetables that would work beautifully are zucchini and tomatoes, for example. You can add other fresh herbs such as garlic, parsley, rosemary, and oregano, and other spices such as paprika, cayenne pepper, cumin, or curry powder–whatever best accompanies the rest of your meal.

The best part, though, is that it is a simple way to introduce healthy starches and vegetables without a lot of fuss or prep, and the individual parcels add a playful element to the meal, that even children will appreciate!

My favorite thing to grill is a medley of vegetables! I toss them in a simple mix of olive oil, salt and pepper (sometimes I add balsamic vinegar or red wine) and throw them on the grill till they are slightly soft and charred.

The resulting veggies are heavenly by themselves or great in pasta salads, on sandwiches, pizzas or even in marinara sauces. Totally versatile and ALWAYS delicious!

Especially asparagus and zucchini. What easier way to make veggies than toss them in some olive oil and season with salt and pepper and grill them to bring out their natural beautiful flavours. Drizzled with a balsamic vinegar reduction, they are perfection.
