You CAN Have your (Fruit)cake and Eat it Too

Christmas is fast approaching, and for so many of us, that means lots and lots of sweet treats. We’re surrounded at the office by the delectable morsels our coworkers bring in. There are the ubiquitous popcorn tubs that some companies send out…you know the ones…1/3 cheesy popcorn, 1/3 caramel corn, and 1/3 buttery popcorn. Takes all the healthy aspects of popcorn and washes them down the drain.
Well, never fear, there is one Christmas sweet staple that you can eat and not feel guilty about: Healthy Fruit Cake. I know what you’re thinking: “Fruitcake? Is she nuts? Those things are doorstops!” Well, not this recipe. It’s moist, it’s delicious, and it’s got very little fat. Take a look:
Cooking Time: 1 hr
Ingredients
- 1 cup granulated sugar
- 3/4 cup light brown sugar, packed
- 8 ounce fat-free cream cheese, softened
- 1 tablespoon lemon rind, grated
- 1 tablespoon orange rind, grated
- 2 teaspoon vanilla
- 4 eggs
- 3 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon salt
- 1 cup fat-free sour cream
- 1 cup mixed dried fruit, coarsely chopped
- Dried cranberries
- Dried cherries
- Dried blueberries
- 1 cup powdered sugar
- Orange juice
Instructions
- Combine sugar and enough orange juice to make a glaze consistency.
- Beat sugars, cream cheese, citrus rinds, and vanilla until smooth in large bowl; beat in eggs.
- Mix in combined flour, cornstarch, baking soda, and salt alternately sour cream.
- Mix in fruit.
- Pour batter into greased 12 cup fluted tube pan.
- Bake at 350 degrees until toothpick inserted in center comes out clean, about 60 minutes.
- Cool in pan on rack 10 minutes; remove from pan and cool.
- Drizzle with glaze.
